The secret to a wine that transcends the seasons begins in our unique terroir in the Távora River valley, in Cimo-Corgo. The schist and granite soils, combined with the altitude of Quinta do Convento de S. Pedro das Águias, give our wines a natural acidity and minerality that form their backbone. In the cellar, the longevity of our wines is crafted with almost surgical precision. We begin with a hand-harvest into small crates, ensuring the grapes arrive in ideal condition. The structure is consolidated through balanced fermentation, which may take place in stainless steel vats to preserve the fruit’s purity or in French oak barrels, resulting in complex, food-friendly wines for any time of year. Through the bâtonnage technique, we keep the wine in contact with the lees, giving it body, creaminess and a natural coating that helps prolong its life in the bottle.
