Ingredients (for four people):
- 4 slices of soaked cod ( soak and rinse at least 3 times)
- 1kg small potatoes
- 4 cloves of garlic
- 2 medium onions
- 1 bunch of fresh parsley
- 200 ml Quinta do Convento Extra Virgin Olive Oil
- Salt and pepper to taste
- Black olives to decorate
Preparation:
1. Preheat the oven to 200°C or 400 Fahrenheit.
2. Prepare the potatoes: wash the small potatoes well and boil them unpeeled in salted water for about 10 minutes. Drain and mash them lightly.
3. Assemble the dish: place the sliced onions on a baking tray as a base. Arrange the cod pieces and potatoes on top.
4. Season: drizzle generously with the Quinta do Convento Olive Oil, add the sliced garlic cloves, sprinkle with salt and pepper and finish with a sprig of parsley.
5. Place in the oven and bake for 25-30 minutes, or until the cod is tender and the potatoes are golden brown. Drizzle the oil from the baking tray occasionally to intensify the flavours.
6. Finish: before serving, garnish with black olives and a drizzle of olive oil to enhance the flavour.
